大蒜对土壤的适应性很强,除盐碱、沙荒地外都能生长。但因其根群小而短,吸收养分的能力差,故以富含有机质、排水良好、疏松的沙质土壤为最好。大蒜怕碱,不喜黏土、碱地栽培,否则种瓣易腐烂、易招致蒜蛆危害,而且秧苗黄弱,返碱时假茎倒伏。大蒜是弦状须根,吸水肥能力较弱,鳞茎又在土壤中生长、膨大,所以大蒜应选择土壤疏松、排水良好、有机质丰富的地块栽培。大蒜忌连作或与其他葱属植物重茬,否则,根系发育不良,植株长势衰弱,易罹病害,而降低产量和品质。大蒜对前茬作物要求不严,秋播大蒜以早熟豆类、瓜类、茄果类和马铃薯等茬口较好,春播大蒜以秋菜豆、豇豆、南瓜、茄果类最好。大蒜施肥量大,吸肥量少,土壤残留肥较多,而且其根系分泌的杀菌素,可防治后作的有关病害,所以大蒜是各种作物的良好前茬。
大蒜根系在土壤中分布浅,主要根群集中在25厘米以内的表土层内,吸收能力较弱,因此播种前要早腾茬,早耕翻晒垡。前茬作物收获后立即深翻、整平。若墒情不足应在前茬收获之前造墒,一般耕深30厘米左右。播种前晒10~15天,并要精细耙地,达到平整地面,上松下实,以促进幼苗齐、全、壮。秋播大蒜前茬收后立即清地,精耕细耙,整平作畦。可作成畦面宽1.9米,畦埂宽25厘米、高15厘米。春播大蒜要在冬前深翻细耙,作畦或作垄,封冻前灌水,保持底墒。畦向以南北向最好。畦的面积,以排灌便利,提高土地利用率为原则,畦长不限。大蒜吸收氮、磷、钾三元素比例为1∶0.65∶1.19,需钾量最高。
大蒜施肥依据收获的对象不同方法也不同:
以蒜苗为收获对象时,播种前结合整地667米2施1000~1500千克有机肥作基肥,当蒜苗出土后3.3~3.6厘米高时开始追肥,以后每隔10~15天追腐熟人粪尿500~800千克,共追2~3次。
以蒜薹和蒜头为产品时,基肥667米2施有机肥3000~5000千克、豆饼100~150千克、尿素15千克、过磷酸钙50千克、硫酸钾25千克,或硫酸钾复合肥100千克。第二年春暖后,要重施1次追肥,一般667米2施尿素15~20千克、硫酸钾10千克。到蒜头膨大后,不宜施过浓的粪肥。
大蒜忌用生粪,施前要充分腐熟,以防在田间发酵,造成蒜蛆为害,影响幼苗生长发育。南方酸性土壤,在基肥中混入适量石灰,以中和酸度。
