淀粉分为直链淀粉和支链淀粉,直链淀粉是淀粉中使碘显蓝色的部分。直链淀粉并不是朝一个方向伸展的直线状结构,而是由分子内的氢键使键卷曲成螺旋状的立体结构,螺旋中有一定的空腔,碘分子可钻入空腔,蓝色就是淀粉的螺旋状空腔与碘分子相互作用产生的。
