制备果蔬组织提取液。
选取一种实验材料(如你要的苹果……)50g,放入多功能食物粉碎机中,另取50ml蒸馏水,先加入40ml,进行粉碎,留10ml蒸馏水用于冲洗粉碎机,冲洗液并入粉碎液一起过滤。
用尼龙纱布过滤,将滤液收集在烧杯中,加入4ml
质量分数为2%的可溶性淀粉溶液,并滴加质量分数为2%的盐酸将ph调至3。

滴定组织样液
取1/2上述滤液置于锥形瓶中,记录滴定管初读数,然后开始用浓度为0.02mol/l的碘溶液进行滴定。速度不能太快,边滴定边晃动锥形瓶,使碘溶液与滴定溶液充分混合。随时注意锥形瓶中溶液的颜色变化,防止碘溶液过量。至锥形瓶中溶液呈蓝色,且在0.5min内不褪色为止,及时记录末读数。重复滴定一次。计算出两次滴定所用碘溶液量的平均值。
3.
计算所测苹果中的维生素c含量。
在理解公式:“某种果蔬(苹果)组织中维生素c含量(mg/100g)=滴定组织提取液用去的碘溶液量(ml)/滴定标准维生素c药片溶液用去的碘溶液量(ml)*100*4”的基础上进行计算。
